Pumpkin seeds are delicious smoked on the Traeger Grill.  Smoking adds another layer of flavor to this Fall treat.

Smoked Salt & Pepper Pumpkin Seeds

Seeds from one or two pumpkins

Olive oil

Salt and pepper to taste

A pinch of spice (optional), I like Aleppo pepper

  1. When ready to smoke, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.
  2. Remove pumpkin pulp and strings from seeds.  Rinse under cold water.  Dry on towels.  Toss seeds with olive oil and sprinkle with salt, pepper, and spices (optional).  Lay seeds in a single layer on a baking sheet.
  3. Smoke about 40 minutes, tossing seeds occasionally and tasting.  Adjust seasonings if necessary.  Remove from Traeger when seeds are golden brown.  Store in airtight container at room temperature.

Variations:  You can change the spices and create different variations.  For example, try a pinch of curry powder for an Indian flair, or some Cajun spice or smoked paprika.  There are endless varieties that you can make.
