I rarely use a recipe when making granola.  For me, making granola is all about using a simple formula.  Free yourself from adhering to a recipe and mix and match to your taste preferences.

Homemade Granola Formula

Recipe makes one batch, but you can double or triple easily

Step 1:  Preheat oven to 300 degrees

Step 2: In a large bowl, mix 3 cups thick rolled oats (not instant), I preferred Bob’s Red Mill brand + 1 cup nuts + 1 cup seeds

Step 3: Whisk together 1/2 cup honey OR maple syrup OR brown rice syrup + 1/2 cup neutral oil, such as canola or grapeseed

Step 4: Season to taste with a little kosher salt, cinnamon and/or cardamom and/or nutmeg

Step 5: Line a rimmed baking sheet with parchment paper and spread granola mixture in a nice layer.  You do not want a thick layer or your granola will not get crunchy and brown.  Use two sheets if need be.

Step 6:  Place baking sheets in oven.  Stir every 15 minutes or so until granola is golden brown and dry.  If the granola looks like it is getting too brown, but still wet, lower the oven temperature to 250 degrees.  Continue stirring every 15 minutes.  You want the granola to be dry to the touch.

Step 7:  Remove pan and stir in 1 cup dried fruit and 1/2 cup shredded coconut (a.k.a. things that can burn).  Cool granola completely before packing into airtight containers.  Store up to two months in airtight containers or up to one year in the freezer.
