Smoked Cherry & Luxardo Pie
Traeger grills are perfect for making pies. If you can bake a pie in the oven, you can smoke it in a Traeger. Please see my previous post for a Smoked Apple Tart that my family gobbled. I wanted to smoke another pie and was thinking “What fruit would taste good with a hint of smokiness?” Cherries! To elevate this pie and boost its flavor, I have also added Luxardo which is a Maraschino liqueur.
Normally I would go to the farmer’s market and buy cherries, pit them, and go from there. But sometimes fresh cherries are not in season or tasting the best. I have read that many bakers have had good luck with Morello Cherries in Light Syrup from Trader Joes. The ingredients are simple: cherries, water, and sugar. You will need three jars (sold in 24.7 oz sizes) for this recipe. I highly recommend buying the cherries from Trader Joes because they are a bargain. Conversely, I have seen sellers on Amazon selling jars of these cherries for up to four times the price.
Smoked Cherry & Luxardo Pie
Equipment needed: Traeger Grill, 9″ pie dish
All-Butter Pie Dough
2 cups all-purpose flour
1/4 teaspoon salt
2/3 cup cold butter
4 to 5 tablespoons cold water
Combine flour and salt in bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in enough water with fork just until flour is moistened.
Shape dough into ball and flatten into a disc. Wrap in plastic food wrap; refrigerate for at least one hour.
Roll out dough on lightly floured surface into 12-inch circle. Fold into quarters. Place dough into 9-inch pie pan; unfold dough, pressing firmly against bottom and sides. Trim crust to 1/2 inch from edge of pan. Crimp or flute edge. Freeze pie crust until ready to fill (at least 30 minutes).
1/2 cup old-fashioned oats
1/4 cup flour
1/4 cup light brown sugar
1/4 cup chopped nuts of your choice (optional)
1/4 tsp kosher salt
1/2 stick of butter, cut into small pieces and chilled on a plate
Whisk all ingredients together except butter. Add butter and using fingers, pinch butter into mixture. Incorporate mixture quickly and return to refrigerator until baking time.
3 24.7 ounce jars Trader Joes Morello Cherries in Light Syrup
3/4 cup sugar
1/4 cup Luxardo liqueur
3 tablespoons cornstarch
2 tbsp. fresh orange juice
zest of one orange
Fill Traeger with hardwood pellets of your choice. When ready to smoke, start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350F and preheat, lid closed, for 15 to 20 minutes.
Place pie dish with crust fitted inside on foil lined baking sheet (in case pie bubbles over during smoking).
Combine drained cherries and remaining ingredients in large bowl. Using rubber spatula, gently mix ingredients until cherries are coated.
Pour cherries into pie crust.
Top with crumble.
Smoke pie until cherries are bubbling and look thickened, about 1 1/4 to 1 1/2 hours.
Allow pie to cool for at least 3 hours so that filling can set and thicken. Do not cut early or the filling will be runny. Cover and store up to one day.
